Recipe of the Month: Pumpkin Oatmeal Bake

INGREDIENTS

  • 2 ¾ cups old fashioned rolled oats
  • 2 tsp. pumpkin pie spice
  • 1 tsp. baking powder
  • ¼ tsp. salt
  • 1 cup pumpkin puree
  • 1 cup unsweetened almond milk
  • 2 whole eggs
  • ⅓ cup pure maple syrup or honey
  • 3 tbsp. olive oil
  • 2 tsp. pure vanilla extract
  • ½ cup chopped pecans, toasted (optional) and more for topping

PREPARATION

  1. Preheat oven to 375°F. Grease a 9-by-9-inch baking dish with oil or spray. Set aside.
  2. In a bowl, combine all of the ingredients.
  3. Transfer to the prepared dish and top with additional toasted pecans, if desired.
  4. Bake for 30 to 34 minutes or until center is set and a toothpick inserted in the center comes out clean.
  5. Let sit for 5 minutes before serving.
